Sweet Potato Mash

Ingredients

  • 10 oz sweet potatoes
  • 1/8 cup skim milk
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon chopped thyme
  • salt and pepper to taste

Instructions

Sweet potato mash is an easy variation of the nutrition powerhouse baked sweet potatoes. Peel the skin off sweet potatoes. Blend potatoes with an electric mixer. Slowly add milk. Add salt and pepper. Place mixture in a sauce pot over medium heat, stirring often. Heat for 3 – 5 minutes until cooked through. Top with cinnamon and thyme.
