Spanish Rice

  • 1 cup long grain rice
  • 1 cup finely chopped red onion
  • 1 garlic clove, minced
  • 8 cups chopped fresh spinach, stems removed
  • 1/2 cup water
  • 1/2 cup wild fennel fronds or dill
  • 2 tablespoons extra virgin olive oil
  • salt and pepper to taste
  • juice of 2 lemons, strained


Spanish rice is an easy-to-make delicious side dish. Heat 2 tablespoons of olive oil in large skillet over medium heat. Add onion stir frequently until soft, about 2 – 3 minutes. Stir in garlic. Add rice and stir for 3 minutes. Add spinach, cover, and cook until the spinach loses most of its volume. Add water, fennel, salt, and pepper. Simmer covered, stirring occasionally until all the liquid is absorbed, and rice is cooked and very tender, about 25 – 30 minutes. You can add more water after about 15 minutes if you think it is needed to achieve a creamy consistency. With about 3 minutes remaining, add lemon juice. Serve with grilled chicken or baked fish.
