2 Minute Omelet


  • 2 eggs or 1 egg and 2 egg whites
  • your favorite chopped vegetables
  • black pepper to taste
  • bacon seasoning to taste
  • 1/8 cup shredded lite cheese


This is an easy to make 2 minute omelet that doesn’t require a lot of clean up time either.

Coat a ½ pint or larger mason jar with non-stick cooking spray. Add all ingredients. Secure lid on top and shake until well mixed. Remove lid and microwave for 1 – 2 minutes, stopping and re-starting the microwave if the jar is going to overflow. Eat immediately or refrigerate overnight. If refrigerated, this can be eaten cold or reheated in the microwave for about 20 seconds.
