- 2 cups grated cauliflower
- ¼ cup egg whites
- 1 cup low fat cottage cheese, drained
- 1 teaspoon oregano
- 2 teaspoon parsley
- ¼ teaspoon garlic powder
- 1 tablespoon coconut oil, optional
You can bake these cauliflower bites and eat them right away, or make them ahead of time and reheat in the oven for a couple of minutes. Preheat oven to 450°F. In hot skillet, stir fry grated cauliflower 6 – 8 minutes or until slightly translucent. Place in bowl and let cool. Blend all other ingredients until smooth. Combine both mixtures until well blended. Spoon mixture into 24 greased muffin tins. Press down evenly and firmly so they stay together when cooked. Bake for 25 – 30 minutes. Let cool 5 – 10 minutes before removing from muffin tins. Serve with salsa. 4 servings.
